And now let’s hear from…
Diana Rysbaeva. Where does the owner, founder and CEO of Shi Hospitality Group that operates Shi, Moli and Mei dine out?

Her top three go-to, favourite restaurants in the UAE:
Trèsind Studio on Palm Jumeirah is a place I deeply admire for its artistry and precision. Chef Himanshu Saini’s approach to progressive Indian cuisine is exceptional. Every dish is thoughtful, technical, and beautifully executed. It’s more than a meal; it’s a culinary experience that truly showcases the evolution of modern gastronomy in Dubai.
Seoul Garden in Karama holds a very special place in my heart. With my Korean roots, it represents more than just a restaurant. It reflects heritage, culture, and identity. I have been going here with my family for many years, pretty much every Sunday. It has become a true tradition.
Bungalo34 on Pearl Jumeirah is one of my favourite outdoor dining spots in Dubai. I love the relaxed yet refined atmosphere, and the location is conveniently close to home. It’s perfect for enjoying the beautiful weather, good food and a laid-back coastal ambience. My go-to place when I want something elegant yet effortless.
One home country restaurant:
Chef Tenishev’s Restaurant in Kyrgyzstan is very personal to me. It’s a place where I spend time with family whenever I’m back home. It was one of the first molecular gastronomy restaurants in Kyrgyzstan, introducing a completely new culinary direction for the country - bringing creativity, technique and innovation to the forefront of the dining scene. I admire the courage behind pioneering something so different. A place that represents progress and vision within my home country’s evolving gastronomy.
One restaurant located elsewhere internationally:
Potong by chef Pam in Bangkok truly inspires me. A female-led restaurant that represents strength, vision and creativity. The concept, storytelling and bold flavours make it an unforgettable dining destination. I admire the seamless combination of heritage and innovation. It’s empowering to see female leadership shaping the global culinary scene in such a powerful way.
